In the nineteenth century, field workers in Manzanares were called Day laborers, who were and are the ones who perform all manual labor in Agriculture. Where the man's hand was necessary to solve any problem of agriculture, there was the day laborer. During the approximately two months of harvesting the grapes, the grape harvester's schedule was from light to light, meaning the work stretched from the first light of morning until the workers themselves stopped seeing the grapes before them. The treadmills of the cellars passed to the jaraiz at four in the morning, and left their work at about ten at night. Those long days were rewarded with a salary of between 3.50 to 4 pesetas a day. The denominated Pisador de Chancla gained in those times 4 pesetas, since its work consisted in extending the grapes inside the jaraíz so that they reached a height of approximately 40 centimeters, to begin a rhythmic dance on the extended grapes, until they were able to extract all the Juice from inside.
