Dehesa de los Canónigos is a Ribera del Duero winery located on a farm in Pesquera de Duero with a long history linked to agriculture and viticulture. Its origins go back to the Cabildo of the Cathedral of Valladolid, formed by 22 canon monks who ran the farm until the middle of the 19th century.

In 1989, Luis Sanz Busto obtained the first vintage of Dehesa de los Canónigos wine thanks to the fruit of a great work previously done on vineyards with which he traded with other neighboring wineries.

The vineyard of the winery consists of an area of ​​approximately 60 hectares, with a yield of less than 3,500 kg / ha. On these plots, Tempranillo is grown mainly, although there are also varieties of Merlot, Cabernet Sauvignon and Albillo. The land is located on the slope of a slope about 800 meters above sea level, within the so-called Golden Mile of Ribera del Duero, with a clear influence of the Mediterranean-Continental climate.

The harvest is always done manually in individual boxes to ensure the quality of the grapes. Once in the winery, the must is transformed into wine in a simple process where the fermentation is done with natural yeasts from the vineyard itself and then the aging takes place in French and American oak barrels between one and two years old.
